For the vegan/vegetarians that just don't know what to make for dinner tonight! This is the recipe for you!
I used to work at Maggiano's Italian Kitchen, and one of our best-sellers was the "Lemon Chicken Piccata". Well, I tried my own personal recipe a few times, until I finally got it right!
This recipe serves around 4-5, and can be served with a side of mashed sweet (or red) potatoes, garlic green beans, and red cabbage. ENJOY!
What you'll need:
1 head of cauliflower
1 shallot (minced)
2 lemons (or 1 cup lemon juice)
3 tbp. capers
Stick of vegan butter
Wild rice (boil enough to cover the bottom of the pan!)
Parsley and extra lemon (to garnish)
Start by frying or roasting the cauliflower. Season your cauliflower before preparing if you like more flavor. Boil wild or black rice and coat the bottom of the dish that you plan to use. (I typically use a 9' x 12' glass dish).
Set the rice aside, and begin your sauce. Saute shallots, and once they are light brown add 2.5 cups of vegetable broth, your lemon juice and 1 and a half pours of dry wine. Add your capers! And lastly, whisk in your butter. Seasoning can be added. Let the sauce simmer and add additional lemons if you'd like.
Once the cauliflower is done, place on top of the rice and pour your sauce on top. Place your dish in the over (350 degrees) for about 10-15 minutes and wa-la! You're set!
